Ingredients:

1 cup thick yogurt (dahi)

1/4 cup fresh mint leaves

1/4 cup fresh coriander leaves

2-3 green chilies (adjust to taste)

1-2 cloves garlic

1/2 inch piece of ginger

1/2 tsp roasted cumin powder

1/2 tsp chaat masala

1/2 tsp black salt (kala namak) or regular salt to taste

1 tsp lemon juice

1 tbsp water (if needed)

1/2 tsp sugar (optional, to balance flavors)

Instructions:

Prepare the Yogurt:

Whisk the yogurt in a bowl until it's smooth and creamy. Set it aside.

Blend the Ingredients:

In a blender, add mint leaves, coriander leaves, green chilies, garlic, ginger, roasted cumin powder, and water (if needed) to help with blending.

Blend the mixture until smooth.

Combine with Yogurt:

Add the blended mixture to the yogurt and mix well.

Season:

Add chaat masala, black salt, lemon juice, and sugar. Mix everything until well combined.

Taste and adjust the seasoning as needed.

Chill:

Refrigerate the chutney for about 15-30 minutes to let the flavors meld together.

Serve:

Serve cold with kebabs, pakoras, samosas, or any other snack.
