Let's take that new pizza stone on it's maiden voyage shall we? Let's make a pizzeria favorite! Garlic knots. These garlicky, buttery, pieces of heavenly dough are going to make you happy. They are super easy to make with some homemade or store bought pizza dough and they go together in a flash. Mix up some souped up garlic butter and you are on your way to the perfect dinner roll for just about anything!

I mixed it up and allowed it to rest for about an hour, but you can let it rest for 15 minutes if you like. This dough is very forgiving. I pressed the dough out on my board and then cut it into one inch strips then cut those strips in half horizontally. You can make these as large or as small as you like. We are not going for perfection here and the pizzeria isn't either. They also just cut it and tie it and bake it. I pulled the strips slightly and tied them into knots and wrapped the ends onto the bottom. Once I had them all done I sprinkled my pizza peel with a bit of semolina flour to help them slide onto the pizza stone. If you don't have semolina you can also use a bit of cornmeal.

I preheated my new Pizzacraft pizza stone for the recommended amount of time, which was 30 minutes at 400 degrees. I slid my knots onto the stone and then gently arranged them so they would not touch while baking. The knots baked for 12 to 15 minutes until golden brown and hollow sounding. I pulled them out and then the magic happened.

I mixed up a stick of melted butter with about four cloves of chopped garlic along with some pizza seasoning. I used my favorite pizza blend which is Pride of Szeged Pizza seasoning. You can get that from Columbia Spice Company here: http://bit.ly/columbiaspiceszeged

The butter was brushed over the hot knots right after they came out of the oven and it was time to enjoy. These were simply amazing and my family enjoyed them with a dinner of salad with grilled chicken and lots of mixed raw veggies. This is seriously one of our favorite family meals.

I had leftovers of these delicious garlic knots and tossed them in a zip top bag and placed them in the fridge. We all had some with our lunch the next day of egg salad made from leftover Easter eggs. I wrapped each roll in paper towel and microwaved them for 20 seconds. They tasted fresh baked.
