Spicy Michelin fine dining at the Ji Chuan restaurant in Chengdu,Sichuan province,China 🇨🇳

The Primemutton was back in China again, to continue last year's culinary series. Having presented some of the hotpots and traditional dishes last year, Mutton turned his attention to high end dining which is a fairly recent phenomenon in China.

Spicy food and asian food doesn't usually lend itself to fine dining, but with a demand for high quality produce and wine now in China, it was inevitable that some restaurants would try and tailor a menu towards high end dining.

Sichuan food is noted for its spicy regional specialities, so could a tasting menu be pulled off or would the spice overpower the wine? Or could leading Sichuanese chefs at the Ji Chuan restaurant create a menu with balance and harmony to merit a Michelin plate or Star?
