TrHi guys! Today I have another baking video! I am showing you how to make a Jam and Coconut sponge tray back. Like we had back for old school dinners. I hadn't made this in ages until the other day when my sister sent me a picture on Instagram. Also showing you my secret on how to get a light and fluffy sponge. The tip is the butter need to be slightly melted! When you are making a sponge cake, the reason why the batter splits is that the butter is cold!

►Recipe
225g Self Raising Flour
225g Caster Sugar
225g Unsalted Butter (slightly melted)
4 Eggs
1 tsp Baking Powder
1 tsp Vanilla Extract
Pinch of salt
2 Tbsp Desiccated Coconut
Topping:
Raspberry Jam
Desiccated Coconut

1) Preheat the oven to 170°C and line a 9x13 inch tin.
2) Using an electric whisk or a free-standing whisk, beat the butter and sugar for 10 minutes or until light and fluffy! Make sure the butter is slightly melted/room temperature on a hot day.
3) Slowly beat in 4 eggs and the vanilla, one by one until each egg is fully incorporated.
4)Sieve and fold in the self-raising flour, baking powder, and salt.
5) Add the coconut and 2 tbsp of milk
5) Mix on low until fully incorporated,
7) Pour into the tin, spread out evenly, and bake for 20-30 minutes until golden brown or a skewer comes out clean. Leave to cool down before turning over.
8) Turn over the sponge and spread the jam all over you can use as much or as little as you want! Then sprinkle the coconut on top
9) Trim the sides and divide them into 12 squares. Serve with custard or have it on its own and enjoy!
