In this video I describes how I use my E-Jen container for fermenting cabbage to make sauerkraut. Here are a few important notes.

1. I used 6 lbs of cabbage and 2 tablespoons of salt. I also used lemon juice and dried dill according to the recipe in Fermented Vegetables by Shockey and Shockey.
2. I used a food processor to cut up my cabbage
3. I used my hands to crush up the cabbage in smaller batches with some of the salt.
4. I did all this crushing and hand mixing in the E-Jen bin itself.
5. When I was finished I just used a spatula to scrape down the sides.
6. I put the inner lid on and squished it down until liquid covered the cabbage and came out the little hole.
7. Every morning I check it. Usually, the inner lid has moved a bit or there is liquid on top. This is because CO2 is escaping and pushing things up. That's fine. I just pop the plug and push the inner lid back down over the cabbage to submerge it.
8. Everything looks great! Tastes good too. No mold no problems.
