DUDHI CHANA NU SHAAK

INGREDIENTS:
• 2 tablespoons oil
• 1 teaspoon mustard seeds
• 1 teaspoon cumin seeds
• 1/4 teaspoon asafoetida (hing)
• 1 tablespoon ginger, garlic, and green chili paste
• 1 cup chopped onion
• 1/2 cup chopped tomato
• 1 cup diced bottle gourd (dudhi)
• 1 cup-soaked split chickpeas (chana dal)
• Salt to taste
• 1/2 teaspoon turmeric powder
• 1 teaspoon red chili powder
• 1 teaspoon coriander powder
• 1 teaspoon cumin powder
• Water as required
• 1 tablespoon ghee
• 1 tablespoon chopped coriander leaves
• 1 teaspoon dried fenugreek leaves (kasuri methi)

METHOD:
• Heat oil in a pressure cooker over medium heat.
• Add mustard seeds and let them splutter.
• Add cumin seeds and a pinch of asafoetida (hing).
• Add the ginger, garlic, and green chili paste. Sauté for a few seconds.
• Add the chopped onions and sauté until they turn golden brown.
• Add the chopped tomatoes and cook until they soften and the oil starts to separate.
• Add the diced bottle gourd (dudhi) and soaked split chickpeas (chana dal).
• Add salt, turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well.
• Add water as required and stir to combine.
• Close the lid of the pressure cooker and cook for 2 to 3 whistles.
• Allow the pressure to release naturally.
• Once the pressure has released, open the lid of the pressure cooker.
• Add ghee, chopped coriander leaves, and dried fenugreek leaves (kasuri methi). Mix well.
• Serve the Dudhi Chana Nu Shak with steamed rice.
