These are bursting with coconut flavor and taste even better than the original bounty bar. Even better, they are super easy to make, vegan, and refined sugar free. Store in the freezer and let sit on the counter for a few minutes before serving. Recipe below. Enjoy!

Ingredients:
2 cups (200g) shredded unsweetened coconut
1 tsp pure vanilla extract
¼ cup (50g) coconut oil
⅓ cup (80ml) maple syrup (you could also use honey or agave)
2 cups (350g) vegan dark chocolate, melted

1. Mix all ingredients, except the chocolate in a blender and mix until a paste forms.
2. Press mixture into a cake pan, 1 inch/2.5 cm thick, and freeze for 20 minutes.
3. Once cold, slice into bars and coat in melted chocolate. Chill until set.
4. Store in an airtight container in the freezer for up to 3 months. Enjoy!
