Taking Cooking food back to basics.

Ingredients:
1 pound (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
2 tablespoons olive oil
2 leeks, cleaned and thinly sliced
2 cups mushrooms, sliced (such as cremini or button mushrooms)
2 cloves garlic, minced
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
1/2 cup chicken broth
1 cup heavy cream
2 tablespoon all-purpose / plain flour
1 tsp English Mustard
Salt and pepper to taste
10 sheets of filo pastry – 5 for the bottom and 5 for the top
1/2 cup unsalted butter, melted

After cooking the mushrooms for about 4 mins - chuck the chicken back in
