Welcome to Outdoors with Geoff! Come with me as I make three slabs of Baby Back Ribs on the Char-Griller Gravity 980!

I started by rinsing the ribs and trimming some fat. The membrane was already removed. Afterwards, I patted them dry. I then seasoned both sides of the ribs with the rubs listed below.

•Fiesta Brands Garlic Pepper Seasoning
•Heath Riles Honey Chipotle Rub


I let the rub rest on the meat for fifteen minutes. In the meantime, I preheated the Char-Griller 980 to 275 for the cook. I used B&B Oak Briquettes along with Cherry Wood Chunks in the chute and the ash pan to really get that flavor embedded in these ribs.

After the smoker came up to temp, I placed the Baby Back Ribs on the grates and let them cook for two hours for the first half of the cook. I looked in after one hour and hit them with a spritz of Apple Cider Vinegar and water mixed. At the end of the two hour mark, I pulled the ribs off and brought them in to wrap in foil.

In my wrap, I added brown sugar, some more Honey Chipotle Rub and a few tablespoons of butter. I then wrapped the ribs and placed them back on the smoker, meat side down for an additional two hours. While they were on the cooker I made my glaze which consisted of the following

•1 and 1/2 Cups of Sweet Baby Ray's Barbecue Sauce
•3/4 Cup of Apple Cider Vinegar
•1/4 Cup of Butter

After four hours of total cook time, I pulled the ribs off and looked at the pull back on the bones and could tell they were done. They were toothpick tender as well. I applied the rub with a brush on both sides and placed the rib back on the smoker for an additional twenty minutes. Afterwards, these ribs were done.

These ribs had a great flavor. The Garlic Pepper Seasoning gave a foundation with a hint of parsley. The Heath Riles Honey Chipotle Rub stole the show and delivered a sweet heat that had a nice bit of mild flavor to the heat on the back end. The glaze added the tanginess and the Cherry Wood Chunks gave some great smoke flavor.
