Paniyaram is also known as Gunta ponganalu is a popular breakfast recipe in South India. This is usually made using dosa batter. To make it a healthier and instant recipe, here I have used oats instead of dosa batter. It is very easy to cook with minimal ingredients that are easily available in the market. It can also be served as a snack for kids. Enjoy this delicious and healthy ponganalu with any chutney.

Ingredients:

Oats powder - 1 cup
Sooji - ¾ cup
Yogurt/Curd - ½ cup
Carrot ( grated ) - ¼ cup
Onions ( finely chopped ) - ¼ cup
Green chillis - 4
Coriander leaves - a handful
Curry leaves - few
Salt to taste
Baking soda - ¼ tsp
Oil
Turmeric powder - ¼ tsp

Procedure:
========
1. Finely chop green chillies,onions,coriander leaves, curry leaves and grate carrot. Keep aside.
2. In a mixing bowl, add oats powder and sooji.
3. Now, add carrot, onions, coriander leaves, curry leaves, green chilies, baking soda, turmeric powder, and salt.
4. Mix well and add curd. Add enough water and mix well to get the consistency of dosa batter (pouring consistency).
5. Rest the batter for 20 mins.
6. Heat the appe( ponganalu) pan over medium flame. Grease with oil.
7. Once the pan is hot, turn the flame to low and add the batter to each mold until it fits ¾ of the hole.
8. Cover and cook for a minute. Once the bottom part or the edges turn brown, gently flip over to the other side and cook till golden brown.
9. Once the batter is completely cooked, remove from the pan and enjoy it hot with any chutney.
