If you're a spicy food lover, you need to try this. This is such a comforting dish, especially when the weather is getting colder.

Ingredients:
2 eggplant
Salt
2 tbsp miso paste
2 tbsp soy sauce
1 tbsp white vinegar
1/2 cup water + 1 tbsp legumes concentrate + 1 tbsp mushroom concentrate OR 1/2 cup vegetable broth
1/2 tbsp honey
5 cloves finely grated garlic
1 tbsp finely grated ginger
Chilli oil (topping)

1. Cut wedges of eggplant vertically then halve it horizontally
2. Salt eggplant wedges liberally with salt (est. 1/2 eggplant:1 tsp salt)
3. Leave eggplant wedges to drain for about 30 mins
4. Mix the miso paste, soy sauce, white vinegar, water, legumes concentrate, mushroom, honey, grated ginger and garlic in a bowl
5. Soak up excess water from eggplant with paper towel. Dry off eggplant as much as possible
6. Heat the rapeseed oil in a pan over medium-high heat
7. Sear 1/2 portion of eggplant. Brown each side a little
8. Remove seared portion and repeat for remaining portion
9. When all eggplants are seared, mix all eggplant wedges together
10. Add sauce to the pan
11. Cover the pan with a lid and let it simmer for 10 mins on medium heat
12. Transfer to serving plate and drizzle chilli oil on top
