Recipe:

2 cups (250g) all-purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 tsp ground cinnamon
1/2 cup (113g) unsalted butter, softened
3/4 cup (150g) brown sugar
2 large eggs
1/3 cup (80g) plain yogurt or sour cream
2 cups (460g) mashed bananas (4 ripe bananas)
1 tsp vanilla extract
Optional: 3/4 cup (100g) chopped pecans or walnuts
Instructions:

Preheat oven to 350°F (177°C). Grease a 9x5-inch loaf pan.
Whisk flour, baking soda, salt, and cinnamon in a bowl.
Beat softened butter and brown sugar until creamy. Add eggs one at a time, then mix in yogurt, bananas, and vanilla.
Slowly add dry ingredients and mix until combined. Fold in nuts if using.
Pour batter into the prepared pan. Bake for 60-65 minutes, covering with foil halfway through.
Let cool in the pan for 1 hour, then on a wire rack before slicing. Enjoy!
Store at room temperature for 2 days, or refrigerate for up to 1 week.
