Описание к видео Grilled Veggie Sandwich on Tomato-Garlic Focaccia

One of the good feelings for me is knowing that my kids have a homemade lunch when they are out at school. I try making a wide variety of healthy sandwiches including some protein-packed ones and so I come across different types of recipes as I mix and match different ingredients. This specific bread was also accidentally created in my kitchen. We came to love it with soups and sandwiches. Here I want to share one of my most delicious and complexly crafted bread that has a variety of uses and I bet you will love it too.

Grilled Veggie Sandwich on Herb-Tomato Focaccia

4 garlic cloves
⅓ cup sun-dried tomatoes
⅓ cup packed roasted bell peppers
Handful of fresh parsley
1 tsp of dried Italian herbs
3 tbsp olive oil
1 ½ tsp salt

Combine all these and blend to a puree.

¾ cup lukewarm water- 6 Oz
2 ¼ tsp yeast
2 tbsp honey
4 cups bread flour- 500g

Activate the yeast by combining water, yeast, and honey. Let it stand for five minutes to dissolve. Then add the blended tomato-pepper paste and stir together.
Add the flour and knead your dough. Expect a very sticky wet dough. After the dough is kneaded for at least five minutes, cover the bowl and let it rise in a warm spot.
Well oil your focaccia pan and transfer the risen dough to the pan without deflating it. Grease your hands and stretch the dough to the sides of the pan. Cover it with plastic wrap and let it rest for another 30 minutes. During that time heat your oven to 400 F.
After the second rest, poke your dough again and sprinkle some flaky sea salt on top. Bake it for 30-35 minutes. Make sure to check it for doneness at the 30-minute mark.

For sandwich assembly:
Pickled okra
Pickled onions
Grilled bell pepper
Grilled zucchini
Arugula
Hummus
Stracciatella cheese
Fresh basil
Pomegranate molasses for drizzling on top (optional)

To make pickled okra:
Very fresh baby okra pods- about 1 pound
Mustard seeds
Few garlic cloves
A few whole red chilies
1 tsp of mustard seeds
1 ½ tsp salt
1 ½ tsp sugar
2 cups white vinegar
1 cup water
A small splash of rice vinegar or red wine vinegar ( red wine vinegar is halal)

Combine water, vinegar, salt, sugar, and garlic cloves and bring it to a boil. Stuff the rest of the ingredients in a clean jar and pour the liquid over it. Close the lid and place it in a dark spot like a pantry for a week. Your pickle will be ready after that. Enjoy!
