I have a really simple Lemon Drizzle Traybake for you today! :)

You’ll need:
280g Self raising flour
230g caster sugar
1 tbsp baking powder
230g butter, room temperature
Zest of 2.5 lemons
4 medium eggs
4 tbsp milk, any milk works
For the glaze you need 1 cup granulated sugar and 1 cup lemon juice (about 2 lemons)

Preheat oven to 180c (I have a generally hot fan oven). Add the flour and sugar in a large mixing bowl and mix well. Add the remainder of the cake ingredients and mix using a hand mixer or a stand mixer. Pour into a greased baking tray and bake for 35-40mins or until the top is golden brown and the cake is firm to touch in the centre. Whilst the cake is baking, make the glaze. Add the sugar to a bowl and add the lemon juice until you like the consistency. Once the cake is out, turn it upside down (although this isn’t necessary I just like the flat top once served), and score using a knife. Pour over the glaze and serve!
