I am sharing this pot meal recipe with your favorite bitter melon and a little spicy taste. Hope you like this recipe and enjoy! 😋

📍INGREDIENTS
2 lbs or 3 Bitter Melon
2½ lbs Pork Cross Cut Spare Ribs
1 large yellow onion
8 cloves garlic
2 tbsp cooking oil
2 tbsp Shaohsing rice cooking wine
1 tbsp dark soy sauce
1 tbsp light soy sauce
1 tbsp oyster sauce
1 tbsp sugar
1 tsp salt
1½ cups water
2 tbsp black bean garlic sauce
2-3 tbsp chili oil

📍PREPARATION
1. Cross Cut Pork Spare Ribs: Cut the ribs into pieces. Boil some water, put ribs in and blanch for 3-5 minutes. Remove from heat, clean and rinse with cold water. Drain with colander and set aside
2. Bitter Melon/Gourd: Wash, cut the ends off, cut into half lengthwise. Remove the seeds and white pith with spoon. Slice the half into lengthwise again and cut into size pieces about 1 ½” to 2” long
3. Yellow Onion: Cut in half lengthwise and into long strips half an inch wide.
4. Garlic: chop and mince

📍METHOD
1. On clay pot with medium high heat, add 2 tbsp cooking oil, garlic, sauté until golden brown/fragrant.
2. Add spare ribs, Shaohsing rice cooking wine, dark soy sauce, light soy sauce, sugar and salt. Mix/stir for 2 minutes or until it absorbs the sauce evenly. Add black bean garlic sauce, mix throughly. Then add 1½ cups water, oyster sauce and mix well.
3. Bring to boil, cover lid and let it simmer for 20 minutes with medium low/low heat.
4. After 20 minutes, the ribs should start to soften. Now, add bitter melon, onion, chili oil and mix it throughly.
5. Cover lid and cook for 25-30 minutes with medium low/low heat. When it’s mid way (after 15 minutes), try to stir it so it can cook evenly. Cover lid and continue simmering for the remain 10-15 minutes.
6. Now it’s ready and enjoy! 😋
