EXTREME BUDGET GROCERY HAUL & MEAL PLAN | 84 Meals For $20 | Vegan On A Budget 🌱

Thanks for stopping in and checking out today's Extreme Budget Meal Plan & Grocery Haul! I added the recipes below plus the extreme meal options and the options I am taking for myself! Remember the extreme budget options are based on the recommended serving sizes on the starches!

PUMPKIN OAT BREAKFAST BARS:
Extreme: Makes 30 servings
Me: Makes 15 servings

8 Bars:
4 cups oats
1 1/2 cups pumpkin puree
cinnamon
*Add a splash of water if you need to once you mix up the oats and pumpkin. It should be a thick paste. Spray a baking sheet with non stick spray or line with parchment paper, spread mix and press down with your hands. Bake at 350 for 15-18 minutes. It'll be a crunchy firm texture when it's completely baked. Let cool for 15 minutes before cutting into 8 slices
**Take the extra ingredients and make more bars!!! :)

VEGGIE SUSHI BOWL:
Extreme: Makes 20 servings
Me: Makes 14 servings

-2lbs white rice
-1 bag frozen edamame (unshelled)
-5 lb bag carrots
-3 cucumbers
-16 oz bag chopped lettuce
*Cook rice as you'd like and top with the above ingredients. I love hot mustard and soy sauce with my sushi bowls

CREAMY PASTA WITH PEAS:
Extreme: Makes 24 servings
Me: Makes 14 servings
-3lb pasta (any kind)
-2 can garbanzo beans
-2 lb frozen peas
**Cream sauce
-2 cans garbanzo beans
-4 tbl mustard (I use dijon)
-1 tsp garlic powder
-2 splashes lemon juice
-2 tbl nutritional yeast
**Blend in a food processor until smooth, mix with the pasta and peas once they're cooked

SNACKS:
Extreme: 10 servings
Me: 10 servings
-Apples
-Carrots
