🚩Recipe for 7-8 pax

Ingredients For Pan Mee*
All purpose flour 中筋麵粉 - 500g sifted
Salt 盐 - 1/2 tsp
1 beaten egg 鸡蛋打散
Water 水 - 150ml
Oil 油- 1 tbsp

1) Mix all ingredients well, knead into a dough
2) Add drips of water (if dough too dry)
3) Cover and rest for 1 hour
4) After an hour, divide dough into small portions
5) Feed dough into noodle sheet roller
6) Lightly dust with flour (when dough starts to stick)
7) Feed dough sheet through cutting rollers

Sides Ingredients
Shallots 红葱头 (150g) - slice thinly 切片
Mani Cai 树仔菜
Dried Anchovies 江鱼仔 (60g)
Poached Eggs

1) Fry anchovies until golden brown. Drain and set aside
2) Heat oil (100ml - medium heat) - add sliced shallots
3) Turn off heat when turns light brown. Drain oil
4) Blanch Mani Cai
5) Add salt in a pot of water. Bring water to a boil. Then place egg in the middle of the wok. Turn off heat, cover for 2 minutes. Remove egg and set aside.


Chicken Meat Sauce Ingredients
Shallot Oil 葱油 - 3 Tbsp
Soak dried mushrooms 冬菇浸软 (50g) – slice thinly 切丝
Minced Chicken Meat鸡肉碎 – 400g
Minced garlic 蒜米 (2 cloves)
White pepper 胡椒粉 (1/2 tsp)
Oyster sauce 蚝油 (1 tbsp)
Thick soy sauce 晒油 (2 tbsp)
Soy sauce 酱油 (1 tbsp)
Concentrated chicken stock 浓缩鸡精(1 tsp)
Sugar 糖 (1 tbsp)
Soaked mushroom water 浸冬菇水 (250ml)
Cornstarch slurry 玉米淀粉浆 (2 tbsp)

1) Add 2 tbsp of shallot in oil into wok. Add in garlic, then sliced mushrooms. Sauté until fragrant.
2) Add in chicken meat, cook for 5 minutes. Add in all the seasonings and water. Cover and cook for 2 minutes.
3) Add in cornstarch slurry, cook until sauce thickens. Add in 1 tbsp of shallot oil. Mix well. Then remove and set aside.

Dark Sauce Ingredients
Oyster sauce 蚝油 - 2 tbsp
Thick soy sauce 晒油 - 1 tbsp
Sugar 糖- 1 tbsp
Water 水 - 50ml
Shallot oil 葱油 - 1 tbsp
White pepper 胡椒粉 - 1/4 tsp

1) Cook sauce over medium low heat 中小火煮酱汁
2) Pour into a bowl 倒入碗备用


*Prepare and assemble Pan Mee*
Add salt into water 盐加入水煮沸 (bring to a boil)
Cook noodles 煮面条 (3 minutes)
Add sauce into bowl 酱汁加入碗里 - 1 ½ tbsp
Coat noodles with sauce 面条酱汁拌匀
Add in fried anchovies 加入炸江鱼仔
Fried shallots 炸葱
Chicken meat sauce 鸡肉酱汁
Blanched mani cai 烫熟树仔菜
Poached egg加入水波蛋
Garnish with chopped spring onions 撒上青葱
