Mung Beans with Shrimp Recipe:

Ingredients:

1 cup mung beans
200g shrimp
1 cup spinach leaves
1 tsp ground pepper
1 tbsp cooking oil
1 medium onion, chopped
3 cloves garlic, minced
1 thumb-sized piece of ginger, sliced
1 medium tomato, sliced
1 shrimp cube (or broth cube)
1 tbsp fish sauce
1 green chili
1 glass of water

Instructions:

Step 1: Boil the Mung Beans

Rinse 1 cup of mung beans thoroughly, then place them in a pot of boiling water.
Let them cook for at least 30 minutes until they are tender.
Once fully cooked, drain and set aside for later use.
Step 2: Sauté the Aromatics

Heat 1 tablespoon of cooking oil in a frying pan over medium heat.
Add 3 cloves of minced garlic and the sliced ginger. Stir and sauté for a few minutes until fragrant.
Step 3: Add the Onion

Toss in 1 chopped onion and stir it into the garlic and ginger. Cook until the onion becomes soft and translucent.
Step 4: Add the Tomato

Add 1 sliced tomato to the pan. Stir everything together and let the tomato soften, releasing its juices into the mix.
Step 5: Cook the Shrimp

Add the 200g of shrimp to the pan. Stir in 1 teaspoon of ground pepper.
Cook the shrimp for a few minutes until they turn a bright orange color. Make sure they are cooked through, but don’t overcook them.
Step 6: Add the Cooked Mung Beans

Pour the cooked mung beans into the pan with the shrimp mixture. Stir everything together to combine all the flavors.
Step 7: Add the Shrimp Cube and Water

Add 1 shrimp cube (or broth cube) and stir until dissolved.
If the mixture seems too thick, add 1 glass of water to loosen it up. Stir and let it simmer for a few minutes.
Step 8: Season and Add Spinach

Add 1 tablespoon of fish sauce to the dish for extra flavor.
Then, add 1 cup of spinach leaves and stir them into the mixture. Let it cook for a few more minutes until the spinach wilts and the broth is boiling.
Step 9: Taste and Serve

Taste your dish and adjust seasoning if needed. Once everything is cooked through and flavorful, your Mung Beans (Monggo) with Shrimp is ready to serve!
