Stuffed Potato Bowl with Lentils, Delicious and Easy Vegan Recipe, Mrs Vegan


Stuffed Red Lentil Potato Bowls Recipe 🥔🍅🌿

Ingredients:
• Red lentils: 1/2 cup
Rinse and soak in water for 30 minutes.
• Potatoes: 2 large
Wash and poke small holes with a fork. For a crispier skin, rub lightly with olive oil.
Bake at 200°C (390°F) for 50-60 minutes. Test with a knife or toothpick; if soft, they’re ready! 🥔✨
• Olive oil: 3 tbsp
• Mushrooms (chopped): 2 cups 🍄
Sauté and set aside.
• Onion (chopped): 1 medium 🧅
• Carrot (grated): 1 medium 🥕
• Zucchini (grated): 1 small 🥒
• Tomato puree: 1/2 cup 🍅
• Spices:
• Salt: 1/4 tsp
• Red pepper: 1/4 tsp 🌶️
• Black pepper: 1/4 tsp
• Turmeric: 1/4 tsp
• Thyme: 1 tsp 🌿
• Water: 1 cup
• Parsley (chopped): 1/3 cup 🌿
• Lemon juice: 3 tbsp 🍋
• Additional olive oil: 2 tbsp
• Salt and pepper: Adjust to taste.

Instructions:

1️⃣ Bake the Potatoes:
Wash the potatoes, poke holes, and bake as instructed. Set aside once soft. 🥔✨

2️⃣ Prepare the Red Lentil Stew:
• Heat olive oil in a pan. Sauté the mushrooms and remove them from the pan.
• Add onion, carrot, zucchini, and spices. Sauté for a few minutes.
• Add soaked red lentils and tomato puree. Mix well. 🍅
• Pour in water, cover, and simmer over medium heat for 20 minutes, until the lentils are tender. ⏱️🍲

3️⃣ Prepare the Potato Bowls:
• Remove baked potatoes from the oven. Cut them in half or carve out the top to create a bowl shape. Scoop out some of the insides. 🥔✨

4️⃣ Assemble the Bowls:
• Fill each potato bowl with the red lentil stew.
• Top with sautéed mushrooms, parsley, and a drizzle of lemon juice. Add sweet corn or other toppings to your liking. 🌽🍄
