Ingredients:
3.8-4 pounds ground beef (semi-frozen or super cold, 50°F or below)
1/2 teaspoon baking powder
2 teaspoons fish sauce
2 tablespoons sugar
3 cloves garlic, minced
1 teaspoon black pepper
1/4 cup cornstarch
1 tablespoon soy sauce
2 teaspoon chicken seasoning mix
7 tablespoons ice water
Instructions:
1.    In a food processor, blend one portion of the ground beef with the baking powder, fish sauce, sugar, minced garlic, black pepper, cornstarch, soy sauce, and chicken seasoning mix. Repeat with the remaining ingredients.
2.    Gradually add 1 1/2 to 2 tablespoons of ice water, 1 tablespoon at a time, to each portion in the food processor while blending. Continue blending until the mixture forms a smooth dough.
3.    Return all the blended mixtures to the food processor and pulse until well combined and evenly mixed.
4.    Place the mixture in the freezer for approximately 10 minutes to keep it cold.
5.    Shape the mixture into 1-inch balls.
6.    Boil a large pot of water over low heat. Carefully add the Bo Vien balls to the water and cook until they float to the surface, about 8 minutes.
7.    Remove the Bo Vien from the hot water when they are browned on all sides, about 5 minutes. Place in ice-cold water.
8.    Serve the Bo Vien hot with pho or hot soup and your favorite dipping sauce.
