Ingredients:
150g heavy cream
150g mashed avocado
100g homemade Greek yogurt
30g erythritol

100g 85% dark chocolate
20g coconut oil
20g chopped roasted peanuts

Directions:

For the ice cream:

Use an electric mixer to whip the heavy cream until stiff peaks form.
In a separate bowl, mix mashed avocado, homemade Greek yogurt, and erythritol together.
Fold the whipped cream into the avocado mixture until evenly mixed.
Pour the mixture into a container and freeze for at least 4 hours.
For the crunchy topping:

Melt the dark chocolate and coconut oil in a microwave or double boiler.
Add chopped roasted peanuts and mix well.
Spread the mixture on top of the frozen ice cream.
Freeze for another 30 minutes before serving.
