🟢材料:
急凍雞扒 1 塊
鹽、薑汁、 紹酒 適量

🟢步驟:
1️⃣ 在水中加入 1 茶匙鹽,將雞扒浸泡 10 分鐘解凍。
2️⃣ 洗淨雞扒並吸乾水,略微切幾刀讓其變薄。加入少許薑汁、適量鹽和 1 湯匙紹酒拌勻,用錫紙(鋁箔)把雞扒卷成圓筒形。
3️⃣ 水滾下鍋放入卷起的雞扒,水再滾起轉小火煮25至30分,完成後測試是否熟透。
4️⃣ 取出並放入冰水中浸泡 30 分鐘,浸泡完成後移除錫箔紙。
5️⃣ 將雞卷放入醉雞汁♦中,放入冰箱中冷藏至少 6 小時,浸過夜效果更佳。
6️⃣ 取出切成薄片,淋上少許醉雞汁增添風味。

🟢Ingredients:
Frozen chicken steak - 1 piece
Salt, ginger juice, Shaoxing wine - as needed

🟢Cooking Directions:
1️⃣ Add 1 teaspoon of salt to a pot of water, and soak the chicken steak in the water for 10 minutes to defrost.
2️⃣ Wash the chicken and pat dry. Make a few shallow cuts on the meat to make it thinner. Mix in some ginger juice, salt, and 1 tablespoon of Shaoxing wine, then roll the chicken into a cylinder shape with aluminum foil.
3️⃣ Bring the pot of water to a boil and add the rolled chicken. Bring the water to a boil again, then reduce the heat to low and simmer for 25-30 minutes. Test to see if the chicken is fully cooked.
4️⃣ Remove the chicken roll from the pot and soak it in a bowl of ice water for 30 minutes. Remove the aluminum foil after soaking is complete.
5️⃣ Place the chicken roll into the drunken chicken sauce♦ and refrigerate for at least 6 hours, or overnight for better flavor.
6️⃣ Remove from the refrigerator and slice thinly. Drizzle some of the drunken chicken sauce on top to enhance the flavor.
