Low carb or low fat? Countless fads and nutrition experts later, people are more confused than ever. Today we tackle this issue and clarify some misconceptions.


Healthy Carrot Cake recipe (adapted from http://www.healthyeatingprogram.info/... and https://plantbasedcookingshow.com/201... to make it even healthier):
You will need:
• 1/2 cup walnuts
• 1/2 cup almonds
• 1/4 cup shredded coconut (optional)
• 1 teaspoon vanilla extract
• 1/2 cup dates, pitted
• 1/4 cup whole grain flour (oat or your choice)
• 1/2 teaspoon each: cinnamon, cardamom, ginger, and nutmeg
• 1 1/2 cups carrots, grated

Frosting
1 1/2 cups raw cashews (soaked in water for 2 hours)
1/2 cup coconut milk (or other plant milk of choice)
8 medjool dates
1/4 cup lemon juice
1 tsp vanilla


Directions:
Preheat oven to 350 degrees.
Place all ingredients EXCEPT carrots in a food processor. Blend well. Fold in carrots.
Smooth into parchment paper-lined cake pan and bake for 20 minutes. Meanwhile prepare frosting: add all ingredients to blender and blend until silky smooth.

Serve and enjoy.
