A classic North Indian dish! Chole Bhature is a popular breakfast or snack combination of spicy chickpea curry (Chole) and deep-fried puffed bread (Bhature). Here's a simple recipe to make delicious Chole Bhature at home:

Chole (Chickpea Curry)

Ingredients:

- 1 cup chickpeas (kabuli chana), soaked overnight
- 2 medium onions, chopped
- 2 cloves garlic, minced
- 1 medium tomato, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon amchur powder (dried mango powder)
- 1/2 teaspoon turmeric
- 1/2 teaspoon red chili powder
- Salt, to taste
- 2 tablespoons vegetable oil
- 2 tablespoons lemon juice

Instructions:

1. Pressure cook chickpeas until tender.
2. Heat oil in a pan and sauté onions, garlic, and ginger until golden.
3. Add cumin seeds, coriander powder, garam masala, amchur powder, turmeric, and red chili powder. Mix well.
4. Add chopped tomato and cook until soft.
5. Add cooked chickpeas, salt, and lemon juice. Mix well.

Bhature (Deep-Fried Puffed Bread)

Ingredients:

- 1 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 cup yogurt
- 1 tablespoon ghee or oil
- Water, as needed

Instructions:

1. Mix flour, salt, baking powder, and baking soda.
2. Add yogurt, ghee or oil, and mix until a smooth dough forms.
3. Knead for 5-7 minutes.
4. Cover and rest for 30 minutes.
5. Divide into 6-8 portions.
6. Roll out each portion into a ball and flatten slightly.
7. Heat oil in a deep frying pan and fry until puffed and golden.

Tips

- Use a mixture of all-purpose flour and whole wheat flour for a healthier Bhature.
- Adjust the amount of spices in Chole to your taste.
- Serve Chole Bhature with a dollop of raita (yogurt and cucumber) or a sprinkle of chaat masala.
