Gatte ki sabji is a very popular dish from Rajasthan. Gatte ki sabji is made with besan or gram flour and has a yoghurt based gravy.
The gatte ki sabji is an all-weather dish for you do not have to wait for any seasonal vegetables to make this dish! You can enjoy gatte ki sabji with rice or roti.
Often people complain that there gatta in the gatta curry become very hard. So I have shared with you a few tips to ensure that the gatta curry has the softest gatte ever.

Recipe :

Gatte ki Sabzi
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Serves: 3-4

Ingredients:
1 cup Gram flour
1 tsp Red Chilli powder
1 tsp Turmeric powder
½ tsp Coriander seeds powder
Salt to taste
1 tsp Cumin seeds
¼ tsp carom seeds
3 tbsp Desi Ghee
1 cup Yoghurt
5 to 6 cloves Garlic
¼ tsp Asafoetida
2 Green Chilli, finely chopped
1” Ginger, finely chopped
2 Onions, finely chopped
Coriander leaves, finely chopped

Method:
Add ½ tsp turmeric powder, ½ tsp red chili powder, salt to taste, carom seeds, 1 -2 tbsp ghee to the besan and rub well. Add 2 tbsp yoghurt and mix well. Add very little water a t a time to bring together to a smooth dough. Knead the dough well till it is non sticky.
Break the dough into 4 balls. Roll out each ball to a cylinder of 1” thickness.
Cook the cylinders in boiling water for 4-5 minutes till firm. Remove and cool completely. cut into ½” thick pieces.
Heat ghee in a pan. add the cumin seeds, asafoetida, whole red chillies and allow to turn fragrant.
Add the chopped onions and cook till golden. Add chopped ginger, garlic, green chillies and saute for a minute. Now add in the turmeric powder, red chili powder, coriander powder, mix well. Add beaten curds and 1 cup water and stir continuously till it comes to a boil.
Now add in the prepared gatte and cook 4-5 minutes till the gravy thickens. Season with salt, remove from heat, add chopped coriander and serve.
