RECIPE:
Cheese Rolls
Ingredients
For the Filling
2 compacked cups grated cheddar cheese( At room temperature)
2 Tbsp room temperature unsalted butter
1 Tsp vegetable stock mix or ½ Tsp salt
Taste for flavour
Pastry Dough:
14 oz all purpose flour
Or [3 Cups measured lightly]
½ Cup flour for dusting
1 cup salted butter at room temperature.
¾ cup cold ice water
¼ Cup Milk or egg wash
Instructions :
Measure and prepare all the ingredients first to be organized
Heat the oven at 375 degrees Fahrenheit ten minutes before baking
Line a large flat baking tray and set it aside until ready to use .
Add the flour in a large flat dish
Place the butter
Rub the butter into the flour
Until it resembles coarse bread crumbs
Pour a little water at a time in the flour using your fingers
Grab and squeeze the mixture to bring it together
Continue until large lumps are formed
Press it together gently then shape it into a rectangle shape
Wrap them with cling wrap
Refrigerate overnight night or for half of an hour
Cheese Filling
Grate the cheese
Add the vegetable powder and butter
Mix well until all the ingredients are well incorporated (set it aside
When ready to make the cheese rolls
Allow the dough to sit at room temperature for 15 to 20 minutes to become a little soft
Sprinkle some flour on the work surface and place one half of the dough
Using a rolling pin, roll out one half dough into a rectangular shape
in a back and forth motion until it reaches ⅓ inch in thickness
Cut into 6 equal squares 5 inches in length and 4 inches in width.
Spread some cheese filling in the middle
half inch from the edges
Brush the edges with some milk
Fold the top part over into 2 folds
Keeping the seems at the side
Press lightly to seal the seams
Cover and refrigerate overnight
To become chilled
When ready to bake
Using a fork press the edges to seal
Insert holes so the steam escape
Repeat, process with the remaining pieces
Arranged the pastries on a large cookie sheet 1 inch apart
Brush with cream or with some egg wash if preferred
Bake for 25 minutes or until slightly golden and finished.
Place the cheese rolls on a cooling rack to cool .
Enjoy warm or cold
TIPS: Don't press the dough too hard, make sure your water is cold,
Sprinkle flour when kneaded while rolling out the dough, Don't put too much filling it the cheese will slide out when baking .
Cut into equal square shapes
Store in a zip lock bag
Or a plastic bag
For up to two days.
