In this video, I dive into my first experience with meal prepping to see if it’s truly worth the effort. Meal prepping is often touted as a time-saving strategy for busy people, and I wanted to explore if it lives up to the hype. I prepared a variety of dishes to test it out, and I’m sharing my results with you.

Here’s what I prepped:

Deconstructed Eggrolls: I decided to simplify traditional eggrolls by making a deconstructed version. This involved preparing a stir-fry with ground turkey, cabbage, carrots, savory soy- sauce and ginger. It can be served over rice or eaten on its own.

Deconstructed Stuffed Peppers: Instead of the traditional stuffed peppers, I made a deconstructed version by combining diced peppers, ground beef, rice, tomatoes, rice, and spices into a single dish. This approach saves time and effort while still delivering the familiar flavors of stuffed peppers.

Orzo Sausage Pasta: I prepared orzo pasta with Andouille sausage, spinach and a cheesy sauce. This dish is comforting and filling, making it a great option for meal prep.

Coleslaw: To add a fresh and crunchy element, I made coleslaw with cabbage, carrots, peppers, celery and a tangy dressing. It’s a great side dish that adds texture and color to my meals.

Pickled Red Onions: As a finishing touch, I made pickled red onions. They add a burst of flavor and color to any meal and can be stored in the fridge for weeks.

The meal prepping process involved planning, shopping, cooking, and portioning meals into containers. I used plastic containers, labeled them with dates, and stored some meals in the freezer and refrigerator.

While the initial time commitment was significant, I’m hopeful that having these meals prepared will save time and make it easier to stick to healthy eating habits. The meals turned out well, and the pickled red onions added a great touch.
