Hello everyone!

In today's video, I take you to a local ma la tang joint to show you a menu item that gets looked over a lot. It's called 'ma la xiang guo' 麻辣香锅, or spicy stir-fry hot pot. At ma la shops, you pick out your own hot pot ingredients. You can choose from a range of meats, vegetables, meat and fish balls. It's then weighed up (what you pay is based on how heavy your bowl is), and then choose how you'd like it cooked. Classically, you would choose ma la tang 麻辣烫 , where soup gets poured on top of the ingredients, with a strong numbing spice flavour from the ma la/Sichuan peppercorns.

But ma la xiang guo is on another level! Instead of soup, the ingredients get stir-fried in a wok with ma la, peppercorns, dried chillies, and a heap of other seasonings and spices. Holy f!!!! It's so delicious and addictive.
