Pujor Bhoger Labra - Bhoger Khichuri - Durga Puja Bhoger Khichuri Labra- No Onion No garlic recipe
This recipe is usually made during festival time and offered to the Goddess hence the name bhoger labra where bhog means the food offered to the Gods. After offering puja the food is distributed amongst everyone. I make this quite frequently though even on normal days as it is such a healthy recipe.
Ingredients required for making bhoger labra - Serves 8 to 10
Use any seasonal vegetables according to your preference and you do not need to stick to these proportions.
3 medium to small/235 gm potatoes
1 small/176gm sweet potato
2 medium /135 gm carrots
168 gm cauliflower
130 gm tindora or parval
1 medium/227 gm zucchini or ridge gourd(torai)
1 medium/126 gm radish(daikon or mooli)
half of small/250gm butternut squash/pumpkin
1 medium eggplant (brinjal )
1 medium to large tomato
green chillies 4 (adjust proportion according to preference)
1 dried bay leaf
2 dry red chilli (optional)

1 teaspoon heaped turmeric powder (haldi)
2 teaspoons salt or as per taste
2 teaspoons sugar
5 tablespoons oil

1/2 cup hot water if required
For making spice paste -
1 teaspoon ground cumin (jeera powder)
1/2 teaspoon red chilli powder (optional)
4 tablespoons water
2 teaspoons grated ginger
For making dry roast spice powder (bhaja moshla)-
1 teaspoon cumin seeds(jeera)
1 teaspoon coriander seeds(dhania)
1/4 th teaspoon whole black peppercorns. You can replace it with 1 teaspoon fennel seeds (saunf)
1 dry red chilli
1 dried bay leaf (tejpatta)
This is served with a rice and dal porridge called khichuri (link given below) along with fried eggplant, sweet tomato chutney and papadums.
I even have it with rice or chapati if I make it on a normal day.
