To Roast Marinade

Cauliflower
Salt
Turmeric Powder
Chilli Powder
Oil - 4 Tsp


To Make Masala Paste

Oil - 1 Tbsp
Whole Spices
( Cinnamon, 2 Cardamom, 5 Cloves, Fennel Seeds - 1 Tsp, Bay Leaf )
Onion - 2 Nos
Garlic - 6 Cloves
Ginger
Cashew Nuts - 15 Nos
Tomato - 1 No.
Water


To Make Cauliflower Curry

Oil - 2 Tbsp
Roasted Cauliflower
Cooked Peas - 1/2 Cup
Cumin Seeds -1 Tsp
Ground Masala Paste
Turmeric Powder - 1/4 Tsp
Kashmiri Chilli Powder - 2 Tsp
Cumin Powder - 1 Tsp
Coriander Powder - 1 Tsp
Garam Masala - 1/2 Tsp
Salt -1 Tsp
Water - 1 1/2 Cup
Kasuri Methi
Coriander Leaves


Method
Take one cauli flower, chop it into small size florets, soak it in
hot water and strain it.
To this add salt, turmeric powder, chilli powder and mix well.
To a kadai add four tsp of oil, add cauliflower pieces and roast
it for five minutes.
To the same pan, add one tbsp oil, and add the whole spices,
roast it and add two onions chopped, 6 cloves of garlic and a
piece of ginger chopped,15 cashew nuts, one tomato chopped
and cook till it turns mushy.
Transfer it to a mixer jar, add little water and grind it
smoothly.

To a wide kadai, add two tbsp of oil, add one tsp of cumin
seeds, ground masala paste and saute it.
Then add quarter tsp of turmeric powder, two tsp of Kashmiri
chili powder, one tsp of cumin powder, one tsp of coriander
powder, half tsp garam masala powder, one tsp salt and mix it
all in.
Then add one cup of water and add the roasted cauliflower
and half cup of fresh peas cooked and mix well.
Add half cup of water, mix together, close the kadai and cook.
At this stage add some crushed kasoori methi and chopped
coriander leaves and mix it all well.
Yummy and delicious cauliflower gravy is ready to be served
with roti, chapati, poori, idli or any pulav of your choice.
