NOW WE ALL LOVE A SOUP HERE AT BIG OGGIE WORLD AND KELLY FOUND THIS RECIPE IN AN OLD MAGAZINE SO WE THOUGHT WE WOULD GIVE IT A GO.
WE HAVE ADDED BACON, BUT FEEL FREE TO LEAVE THAT OUT IF YOU WISH...

MINESTRONE SOUP WITH PEARL BARLEY
INGREDIENTS:
30g butter
1 onion, diced
2 celery sticks, finely sliced
1 large carrot, peeled and diced
1 large potato, peeled and diced
250g white cabbage, cored and shredded
100g diced bacon lardons, we used smoked. (OPTIONAL)
2 large tomatoes, diced
100g pearl barley, rinsed
2 tbsp chopped parsley
6 sage leaves, finely shredded
1 large courgette, diced
1.75 litres hot chicken stock
Parmesan or pecorino to serve
