The Baiga people are acknowledged as one of India's Particularly Vulnerable Tribal Groups (PVTGs) in India. Recently we met people of the Baiga tribe in the Dindori district of Madhya Pradesh. In a special edition of 'The Tribal Kitchen,' we embarked on a captivating gastronomic adventure, savouring the flavours of the Baiga tribe's traditional cuisine.
One of the culinary highlights was the preparation of 'Contrary Chicken,' a dish steeped in tradition and symbolic of the tribe's culinary expertise. The intricate process, steeped in ancient techniques and local ingredients, unfolded a tapestry of flavours that danced on our taste buds, a testament to the tribe's culinary legacy.
