Nothing beats a bowl of Telur Kuah Lada. The warm peppery gravy, the tanginess of belimbing buluh and the creamy richness of organic @kenkoriegg comfort in every bite.
I teamed up with @kenkoriegg to bring this wholesome dish to life, using the golden-yolked organic eggs make it extra nourishing and flavourful. 🍳✨
Serve it with hot steamed rice and fresh ulam — it’s like a hug in a bowl 💛

Telur Kuah Lada - Kenkori Eggs Cooked in Spicy Pepper Gravy

Ingredients:
10 eggs, boiled
2 eggplants, cut into small pieces
2 red & green fresh chilies
4 bilimbi (belimbing buluh)
2 kaffir lime leaves
½ cup of tamarind water (air asam jawa)
3–4 cups water (adjust for desired thickness)

Blended spices:
2 large onions
10 shallots
6 garlic cloves
1 thumb-sized piece fresh turmeric
3 stalk of lemongrass, chopped
4 candlenuts
½ tbsp white peppercorns, roasted
½ tbsp black peppercorns, roasted
½ tbsp fennel seeds, roasted
1 tbsp of shrimp paste (belacan), roasted
1 cup of water (for blending)

Side dishes to serve with:
A handful of ulam (any of your favourite salad greens)
1 tomato
1 cucumber
Steamed rice

Method:
Boil the eggs @kenkoriegg for 10–12 minutes. Peel and set aside.
Heat oil in a wok. Add the blended spices and sauté until the oil separates (pecah minyak).
Then add in tamarind water, stir and cook over low heat for 2 minutes.
Pour in water and adjust to your preferred gravy thickness.
Next add the eggplant, cover and cook for 5 minutes. before adding in the fresh chilies, belimbing buluh, and kaffir lime leaves. Cook for another 5–8 minutes.
Season with salt.
Finally add the boiled @kenkoriegg
Serve hot with steamed rice, ulam, tomato, and cucumber.
