中秋节快到了,想吃月饼却不要等3天回油吗?推荐你做这款奶黄流心月饼。这月饼采用曲奇饼皮,中间包着奶黄馅和金沙流心馅。趁温切开月饼,中间金沙馅流心效果,奶香浓郁的奶黄馅,再配上牛油奶香月饼皮,咸蛋+卡仕达馅咸甜搭配,太香了,垂涎三尺!
提示:
=流心馅煮一下即可,煮过度变浓,流心效果不好。冷却冻硬才好整形包馅。
=奶黄馅煮得刚好成团即可,煮过度出油。
=月饼面团一定要冻硬再烤,不然容易裂开露馅。

收藏方式:做好温吃流心效果最佳。冷却后收密封容器,室温3-5天。吃前Toaster弄热回温回流心。

Mid-Autumn Festival is around the corner. Wish to eat mooncake but don’t wanna wait 3 days to return oil? Recommend you to make Lava Custard Mooncakes. This mooncake uses cookie crust, with custard filling and golden yolk lava filling in the center. While warm cut open mooncake, golden yolk filling has lava flowing effect in the center, creamy custard filling, and buttery milky mooncake crust, salted egg + custard filling combo of salty sweet flavor, so fragrant, mouth watering!
hint:
=Cook Lava filling just for a while will do, if overcooked become thickened, the lava effect won’t be good. Chill and freeze until hard to shape and wrap the filling.
=Cook custard filling till just right to form dough, overcooking will produce oil separation.
=Mooncake dough must be frozen hard before baking, otherwise easy to cause crack and fillings leakage.

Storage Method: Lava effect is the best eaten warm after baked. After cooling, store in an airtight container at room temperature for 3-5 days. Before eating, reheat with toaster, let warm to enjoy lava center.

2g Gelatine Powder 吉利丁粉
25g Water 水
12g Unsalted Butter (Melted) 无盐牛油 (融化)
8g Custard Powder 卡仕达粉
15g Caster Sugar 细砂糖
1g Salt 盐
35g Dairy Whipping Cream (Room Temperature) 动物性淡奶油(室温)
1pc (13g) Salted Egg Yolks 咸蛋黄
(Total Low Heat Cook fillings for 2-3 minutes) (全程小火炒馅2-3分钟)

=Custard Fillings 奶黄馅 (12pcs, 20g/pc)=
15g Cake Flour/Low Protein Flour低筋面粉
12g Custard Powder 卡仕达粉
15g Milk Powder 奶粉
40g Caster Sugar 细砂糖
1g Salt 盐
1 Large Egg 大鸡蛋
60g Milk (Room Temperature) 牛奶(室温)
3pc (40g) Salted Egg Yolks 咸蛋黄
35g Unsalted Butter 无盐牛油
(Total Stir-Fried fillings for 5-6 minutes) (全程炒馅5-6分钟)

=Crust 饼皮 (12pcs,25g/pc)=
70g Unsalted Butter (Soften) 无盐牛油 (软化)
40g Icing Sugar 糖粉
1 Egg Yolk 蛋黄
30g Dairy Whipping Cream (Room Temperature) 动物性淡奶油(室温)
140g Cake Flour/Low Protein Flour低筋面粉
15g Custard Powder 卡仕达粉
1g Salt 盐

=Egg Wash 蛋液=
1 Egg Yolk 蛋黄

(Top Bottom Heat, No Fan Force, Middle Rack)
(1st Bake) Preheated Oven 200C: 5minutes, brush egg wash

(2nd Bake) Preheated Oven 200C: 5minutes, brush egg wash
(3rd Bake) On Fan Force, Middle Upper Rack, Preheated Oven 200C: 2-3minutes
