Daal is one of the most fundamental parts of the Indian diet, and one can find many wonderful recipes from all across India to make this staple dish. Every house and community will have its own variation either in ingredients or in proportions.

My recipe is called Ambat Varan. 'Ambat' as in sour and 'Varan' means cooked pulse, in this case the toor daal or yellow lentils.

Ambat Varan is made in the CKP community with slight variations. Some use tamarind but this one comes from my Mother-in-Law who uses kokum as the souring agent. Don't forget to top it with home made ghee!

Ingredients :

Toor dal : 1/2 cup
Turmeric : 1/4th tsp
Garlic : 8 cloves
Green Chillies : 2
Finely chopped onion : 1 (medium size)

Hing: 1/4th tsp
Mustard seeds : 1/2 tsp
Cumin seeds : 1/2 tsp
Red chilly powder : 1/2 tsp
Kokum : 10 pieces
Jaggery : 2.5 tsp
Coriander : To garnish
