Resep Pentol Mercon (untuk 35-40 pcs)
Bahan adonan pentol:
400 gr daging sapi giling
1 sdm garam
1 sdt penyedap
1 sdm kaldu sapi bubuk
1 ½ sdm gula pasir
½ sdt merica
200 ml air es
1 butir putih telur
1 sdm bawang putih halus
1 sdt baking powder
200 gr tapioka
30 gr tepung terigu protein sedang
sambal rawit mercon (sebagian)
Bahan sambal rawit mercon:
160 gr cabai rawit merah
80 gr bawang merah
40 gr bawang putih
2 sdm minyak
Bahan kuah mercon:
1 batang daun bawang, potong
1 ½ sdm saus tomat
2 sdm saus sambal
1-2 sdm kaldu ayam bubuk
1 sdm sambal rawit mercon
750 ml air
minyak untuk menumis
Bahan pentol kering:
sambal rawit
saus sambal
kecap manis
bawang merah goreng
seledri, iris
Pelengkap (pentol kuah):
bihun, rendam air
seledri, iris
bawang merah goreng
jeruk nipis
Cara membuat:
1. Potong bawang merah dan bawang putih. Panaskan minyak, masukkan bawang merah, tumis hingga wangi
2. Masukkan bawang putih dan cabai rawit merah yang sudah dipotong, tumis hingga wangi dan sedikit kecokelatan. Biarkan sesaat lalu masukkan ke dalam food chopper, haluskan
3. Di dalam mangkuk, masukkan daging sapi giling, garam, penyedap, kaldu sapi bubuk, gula pasir, merica, dan air, aduk hingga lengket
4. Masukkan baking powder, putih telur, dan bawang putih halus, aduk hingga rata kemudian masukkan tepung terigu dan tapioka, aduk hingga menyatu
5. Masukkan sebagian sambal rawit mercon, aduk rata. Didihkan air, kecilkan api lalu masukkan pentol yang dibentuk bulat dengan garpu, masak hingga matang
6. Untuk pentol kering, campurkan pentol dengan sambal rawit, saus sambal, kecap manis, bawang merah goreng dan seledri
7. Siapkan panci, panaskan sedikit minyak, tumis daun bawang hingga wangi kemudian masukkan sambal rawit mercon, masak beberapa saat
8. Masukkan air, saus tomat, saus sambal dan kaldu ayam bubuk, masak hingga mendidih lalu masukkan pentol ke dalam kuah
9. Pentol mercon siap disajikan

Volcano Pentol Recipe (yield 35-40 pcs)
Pentol Dough ingredients:

1 tsp MSG
1 tbsp beef powder
1½ tbsp sugar
½ tsp pepper
200 ml ice water
1 pc egg white
1 tbsp grated garlic
1 tsp baking powder
200 g tapioca flour
30 g all-purpose flour
Some Volcano Sambal
Volcano Sambal ingredients:
160 g red Thai chili
80 g shallot
40 g garlic
2 tbsp oil
Volcano Soup ingredients:
1 stalk green onion, sliced
1½ tbsp ketchup
2 tbsp chili sauce
1-2 tbsp chicken powder
1 tbsp Volcano Sambal
750 ml water
Oil for sautéing
Pentol condiments:
Volcano Sambal
Chili sauce
Sweet soy sauce
Fried shallot
Celery, sliced
Add-ons (Pentol Soup):
Vermicelli, soak in water
Celery, sliced
Fried shallot
Lime
Steps:
1. Slice shallot and garlic. Heat oil, then add shallot and sauté until fragrant.
2. Add garlic and red Thai chili. Sauté until fragrant and slightly browned. Let cool briefly, then blend in a food chopper until smooth.
3. In a bowl, add ground beef, salt, MSG, beef powder, sugar, pepper, and water. Mix until sticky.
4. Add baking powder, egg white, and minced garlic. Mix until combined, then add flour and tapioca. Mix until fully incorporated.
5. Add some Volcano Sambal and mix well. Heat the water, then lower the heat and drop the pentol shaped into balls with a fork. Cook until done.
6. For Pentol with condiments, combine pentol with Volcano Sambal, chili sauce, sweet soy sauce, fried shallot, and celery.
7. Prepare a saucepan. Heat a little oil, then sauté the green onion until fragrant. Then, add Volcano Sambal and cook briefly.
8. Add water, ketchup, chili sauce, and chicken powder. Bring to a boil, then add pentol into the soup.
9. Volcano Pentol is ready to serve.
