This mawa cake can be made at home without an oven by preparing quick mawa using milk powder, milk, and ghee cooked on low flame until it thickens and separates from the pan. The batter, made with this quick mawa, flour, sugar, butter, and flavorings like cardamom, is poured into an appe pan. The appe cake turns out spongy and tasty.

INGREDIENTS
Khoya/Mava:
2 Tbsp Ghee
1/4 Cup Milk
1/2 Cup Milk Powder

Batter:
3/4 Cup Milk
1/2 Cup + 1 Tbsp Powdered Sugar
1/4 Tsp Cardamom Powder
1 Cup All Purpose Flour/Maida
1 Tsp Baking Powder
1/4 Tsp Baking Soda

METHOD
To make mawa cook ghee, milk powder and milk till the mixture thickens and comes together. Let the mawa cool to room temperature.
⁠Transfer the mawa to a bowl and add milk, cardamom powder and powdered sugar. Mix until well combined.
⁠Sift all purpose flour, baking powder and soda.
⁠Whisk till you get smooth lump free batter. Fold the batter with a spatula for 15-20 times.
⁠Place a tawa and place non-stick appe pan over it. Keep the flame low and pour the batter leaving half the space in each pit for the cake to rise. Cover and cook for 15-20 minutes or till the top of the appe cakes become firm.
⁠Remove from the appe pan adn serve.
⁠Once cooled, can be stored in refrigerator in an airtight container for upto a week.
