Chicken Shawarma 🍗

Ingredients:
-2 lbs boneless skinless chicken thighs
-1/4 cup olive oil
-1 tbs brown sugar
-1 tsp onion powder
-1 tsp garlic powder
-1/2 tsp ground cumin
-1/2 tsp smoked paprika
-1/2 tsp ground coriander
-1/2 tsp turmeric
-1/2 tsp allspice
-1/2 tsp salt
-1/2 tsp pepper
-1/4 tsp cayenne pepper
-1/8 tsp ground cinnamon
-juice of half a lemon

Instructions:
-add oil and seasonings into a large bowl; mix well
-add in chicken thighs, mix until coated, cover, and marinate in fridge for at least 2 hours up to overnight
-air fry at 400F for 20 min until internal temp is 165F; rest for 10 min before cutting into bite-sized pieces

Turmeric Basmati Rice 🍚

Ingredients:
-1 1/2 cups chicken stock
-1 cup basmati rice, rinsed
-half of a white onion, small diced
-1 tsp olive oil
-1 tsp minced garlic
-1 tsp minced ginger
-1/2 tsp salt
-1/2 tsp pepper
-1/2 tsp turmeric

Instructions:
-heat pot or deep pan on medium heat; add oil
-sauté the garlic, ginger, and onion until lightly browned; add seasonings
-add rice and toast for a minute
-add stock, mix well, cover, and simmer on low until rice is fluffy

Cucumber Tomato Salad 🥗

Ingredients:
-1 cup cherry tomatoes, quartered
-3 Persian cucumbers, thinly sliced and quartered
-1 red onion, small diced
-1 tsp olive oil
-1/2 tsp salt
-juice of half a lemon

Instructions:
-add ingredients into large bowl; mix well
-store in fridge in airtight container for up to 5 days
-add on top after reheating meals

Garlic Yogurt Sauce 🧄

Ingredients:
-1 cup Greek yogurt
-1 whole garlic clove, grated
-1/4 tsp salt
-juice of one lemon

Instructions:
-add ingredients into small bowl; mix well
-store in airtight container in fridge for up to 7 days
