उपासाचा मेदू वडा आणि चटणी करण्यासाठी लागणारे साहित्य
मेदू वडा
• १ १/२ कप / २२५ ग्रॅम वरई / भगर
• ३ कप पाणी
• १ बटाटा
• आलं-हिरव्या मिरच्यांचा ठेचा (७~८ हिरव्या मिरच्या आणि १/२" आलं)
• चवीनुसार मीठ
• तळण्यासाठी तेल
चटणी
• १/४ कप कच्चे शेंगदाणे
• १ मोठा चमचा दही
• चवीनुसार साखर
• १ चमचा लाल तिखट
• चवीनुसार मीठ
• जरुरीनुसार पाणी

Let’s see how to make upwas medu vada and chutney today. With Ashashi Ekadashi round the corner, you must be looking for fasting or upwass recipes. So here I am to help you out!! Why don’t you try this upwas medu vada this time? It turns our crunchy outside and soft and light inside. It looks tempting and tastes simply delicious. Also I am sharing fast special chutney. You can enjoy this chutney with upwas amboli or nuggets. This is a good alternative for your regular fasting recipes.

Ingredients:
Medu Vada
• 1 1/2 cup / 225 gm Bhagar / Varai
• 3 cups Water
• 1 Potato
• Green chili-Ginger paste (7~8 Green chilies & 1/2” Ginger)
• Salt to taste
• Oil for frying
Chutney
• 1/4 cup raw Peanuts
• 1 tbsp Curd
• Sugar to taste
• 1 tsp Red chili powder
• Salt to taste
• Water as needed

Method:
Medu Vada
• Wash varai really good 3-4 times and drain all the water from it.
• Heat up water in a pan and bring it to boil.
• When water begins to boil, reduce the heat to medium and add salt, varai and green chili-ginger
paste.
• Peel and grate the potato.
• Add grated potato and mix well.
• Cover and steam the mixture for about 10 minutes until all the water is absorbed into varai.
• When all the water is absorbed into varai, reduce the heat to low and steam the mixture for
another 5 minutes.
• Turn off the gas and let the rice rest for 5 minutes more.
• Loosen the rice with the help of spoon and mash it well with masher.
• Knead it like ukad we knead for making modak.
• Wet your palm with water and make vade from the mixture.
• Heat up oil on high heat in a pan and when oil is hot enough, reduce the heat to medium to high.
• Drop vade into hot oil and fry well until they get nice golden color from both sides.
• When vade ae fried well from both sides, take them out, drain excess oil and transfer them into a
dish. Upwas medu vade are ready.
• Serve medu vada with chutney.
• You can make 36 medu vade from the proportion we used.
Chutney
• Soak the peanuts in enough water for an hour.
• Transfer the soaked peanut into a blender jar and add curd, red chili powder, salt, sugar and water.
• Blend it together into smooth paste and chutney is ready.
• You can soak dry red chilies in water and use them in place of red chili powder.
