To Make Lahori Chole

Chickepeas - 300 Gms
Oil - 3 Tbsp (Buy: https://amzn.to/3KxgtsM)
Whole Spices
( Cinnamon, Cloves, Bay Leaf, Cumin Seeds,
Cardamom, Peppercorns, Star Anise )
Onion Paste
Ginger Garlic Paste - 1 Tsp
Red Chilli Flakes - 1 Tsp (Buy: https://amzn.to/30Nrv4W)
Cumin Powder - 1 Tsp (Buy: https://amzn.to/2TPuOXW)
Coriander Powder - 1 Tsp (Buy: https://amzn.to/36nEgEq)
Salt - 1 1/2 Tsp (Buy: https://amzn.to/2vg124l)
Curd - 1/2 Cup
Amchur Powder - 1 Tsp (Buy: https://amzn.to/37kNpix)
Garam Masala - 1 Tsp (Buy: https://amzn.to/2TPe8jd)

Green Chillies

Method:

1. Soak the chana(chickpeas) for 8 hours in water.
2. Take the soaked chana in a pressure cooker.
3. Add water and salt. Mix well and pressure on a medium flame for 4-5 whistles. Strain the chana. Keep the water too aside.
4. Keep a large part of the cooked chana aside. Take the leftover chana in a mixer jar, add water and grind into a fine paste. Keep it aside.
5. Take oil in a wide kadai. Add cinnamon, cloves, bayleaf, cumin seeds, peppercorns and star anise.
6. Saute and add the onion paste. Saute for 10 mins for the onions paste to brown.
7. Then add the ginger garlic paste and cook for 1-2 minutes.
8. Now add red chilli flakes, cumin powder, coriander powder, salt and mix well.
9. At this point, add nicely whisked curd and cook for 2-3 minutes.
10. Once the oil separates from the gravy, add cooked chickpeas that have been kept aside.
11. Mix well and add the chana cooked water. Boil for 2-3 mins and add the chickpeas paste.
12. Mix well again and add amchur powder, garam masala powder,black pepper powder. Mix well.
13. At this point, check for seasoning and add anything if required. Pour water, mix, close the kadai and cook for 15 minutes.
14. Finally add slit green chillies, kasuri methi and chopped coriander leaves.
15. Yummy Lahori Chana is ready to be served hot with any roti/ mild rice recipes of your choice.

Lahori Chole is a chickpea based gravy curry which has no tomatoes at all. This curry is based on onions, curd and chickpeas for the gravy. It is very much different from the regular chana masala curries we usually make. Since there is onion paste in the gravy, it is going to taste so nice and different. If you are looking for any recipes without tomatoes at all, you can try this one happily. This is a wonderful mildly flavored curry you can enjoy with any Indian flatbread.
