For the last week, I've been turning on the camera to document what I've been up to. These are exciting days made of new experiences, discoveries, and preparations.

My English is far from perfect. So please forgive my mistakes.

Pasta with Lemon Pesto

Octopus Salad

Ingredients

500 g of octopus
1 courgette
1 handful of asparagus
Taggiasca olives
salt
extra virgin olive oil
juice of 1/2 lemon

Method

Bring water to boil in a large pot. Take the cleaned octopus. Dip the tentacles into the pot so they curl up nicely. Then put the whole octopus in water, add the salt, cover with a lid and cook for about 20 minutes. Then let the octopus cool in its water for about 2 hours.

While the octopus is cooling, wash and cut 1 courgette and the asparagus. Cook in a pan for about 15 minutes or until they are cooked enough. Remove the octopus from the pan, separate the head from the tentacles and cut everything into small pieces. Place the octopus, vegetables and Taggiasca olives in a bowl. Season with oils and lemon juice. Add salt if necessary. If you want you can add also some rice or another cereal.
