Bánh Sâm Banh - Savoiardi Ladyfinger Biscuit

Bánh này có nhiều tên gọi hình thức hơi khác nhau, phủ đường cát, đường bột hoặc không, bánh này thì không xài bơ (butter). Tên Pháp là sâm banh (champagne), Mỹ gọi là Lady Fingers, Ý gọi Savoiardi, còn có những tên khác cho dòng bánh tương tự twinkies, sponge biscuit, eclairs, ...Thấy bây giờ bên Việt Nam gọi bánh gần giống bánh này là bánh lưỡi mèo, bánh quy. Làm bánh ladyfingers này để làm bánh Tiramisu, Custard Trifle,...
Nguyên Liệu - Ingredients:
Trứng gà - 4 eggs (58g/each with shell)
Bột mì đa dụng - 120g (3/4 cup) All purpose flour 10% protein
Đường cát trắng - 140g (2/3 cup) sugar (granulated or caster)
Muối - 3g (1/2tsp) sea salt
Tinh dầu va ni - 1tsp vanilla extract

Direction notes:
Line two cookie sheets with silicon baking mat 17.8"x 13"
Place a 1/2" plain tip nozzle in a pastry bag,

1/ Separate the egg whites and yolks
2/ Sift flour and salt together
3/ Beat the egg white with a handheld mixer at low speed until foamy (45 seconds),
Then gradually add 70g sugar, 1/3 sugar at a time. Continue beat until soft peak (5 minutes), speed # 2.
4/ Combine egg yolks and 70g remaining sugar, vanilla. Beat with a handheld mixer until pale yellow (5 minutes), speed #4
5/ Add flour, salt over the egg yolks mixture
4/ Gently mix meringue into yolk mixture, 1/3 at a time. Use spatula to fold the batter until well combined (30 strokes)
5/ Spoon the batter into a pastry bag.
6/ Preheat oven to 300°F
7/ Pipe 10cm (4") long lines on the mat, 2.5 cm (1") apart
8/ Place the baking sheet into the oven on the middle rack, bake at 300°F for 20 minutes or until the outside is hardened
9/ Remove the sheet from the oven. Sprinkle powdered sugar over the biscuits when they are still hot
10/ Let cool down then transfer to a cooling rack. To store, pack in an airtight container, separated by parchment paper
