Tomato Rice - A simple and delicious recipe with rice and tomatoes. You can cook it fast with some simple ingredients. It can be cooked with normal rice but use basmati rice for a better taste. It is served with curd/yoghurt and pickle. Very refreshing recipe for lunch/dinner.

--Ingredients

Oil 1 tbsp
Mustard seeds 1 tsp
Dry red chilli 2 or 3
Chopped ginger 10g
Chopped garlic 10g
Curry leaves 1 sprig
Green peas 50g
Urad dal/Black gram 25g
Raisin & cashew nut 10g each
Chopped onion 1 cup
Chopped tomato 1 cup
Red chilli powder ½ tsp
Coriander powder 1 tsp
Turmeric powder ¼ tsp
Salt 1 tsp
Water 2 tbsp
Sugar 1 tsp (or as required)
Cooked rice 2 cup
Ghee 1 tsp

--Prepare Tomato Rice

Take a kadhai/pan.
Once the pan is hot, add oil.
Once the oil is hot, add mustard, dry red chilli, chopped ginger and chopped garlic.
Once they splutter, add curry leaves, green pea and cover with a lid.
Cook for a minute in a low flame.
Add urad dal, raisins, cashew nuts and saute for a minute.
Add chopped onion and saute until the onion changes to light brown and soft.
Add sliced tomato and saute until the tomatoes soften.
Add red chilli powder, coriander powder, turmeric powder, salt and saute until the rawness is gone.
Add 2 tbsp water, sugar and mix well.
Add cooked rice and mix well.
After a couple of minutes, add ghee and mix well.
Serve hot!!
