Cinnamon Buns
8 buns
All purpose flour 350g
Sugar 28g
Salt 4g
Instant dry yeast 4g
Egg 1
Egg yolk 1
Warm milk 140-150g
Unsalted butter 40g

- Cinnamon Spread
Unsalted butter 55g
Cinnamon 1 1/2Tbsp
Brown sugar 50g
Dark sugar 30g

Prepare Before ✓
* Eggs and butter are at room temperature for at least 30 minutes to get rid of cold.
* Warms the milk. (40-43℃ (104-110℉) / When you put your fingers in, you can feel a little warmth)


1. Put all dry ingredients (flour, sugar, salt, dry yeast) in a clean bowl and lightly mix with a whisk.
2. Add room temperature egg and egg yolk and mix. Add in the warm milk in three portions. Add the rest of the milk if the dough is still dry. The dough should be moist, neither too dry nor too sticky.
3. Make a loaf of dough and transfer to a workbench. Add softened butter to the dough. Fold the dough from outside to inside and mix the butter well. The dough will be very sticky after the butter is added. However, as you knead the dough, it will turn into a smooth.
Begin kneading the dough, pushing it down and then outward. Fold the dough in half toward you and press down. This can take as little as 10 minutes.
4. Put the dough in a clean bowl and cover with plastic wrap. Let dough proof in a warm place until the dough doubles.
(About 1 hour-1 hour and a half / The time may vary depending on the working environment.)
5. Prepare Cinnamon spread. In a clean bowl, add softened butter. Add sugar and cinnamon and mix until smooth. Set aside.
6. After the first proofing, transfer the dough to a workbench and remove the gas from the dough. Shape the dough into a smooth ball of dough and let it rest for 15 minutes.
After 15 minutes, remove the gas from the dough once again and roll out the dough thinly with a rolling pin. Roll it out to make shape close to a square with a certain thickness. (Width 45xLength 55cm)
Spread the Cinnamon spread evenly over the dough. Fold the dough into 3 regular layers, cut it vertically, and divide it into 8 pieces. Cut the each dough to make 3 strands and braid them. (Please watch the video for more details)
Roll the braided dough to make a shape of ball and place it in a tray with parchment paper.
7. Let dough proof in a warm place until the dough rise 1.5-2 times. (Approximately 40 minutes-1 hour)
Bake in an oven preheated to 170℃ (338℉) for 10-13 minutes.
Take it out when the top starts to appear even brown. Brush the surface well with melted butter.
8. Transfer it onto a wire rack to cool it down.
