These decadent mini chocolate bundt cakes are perfect for Valentine's Day or anytime you want a delicious chocolate treat. The chocolate ganache makes this the perfect treat for chocolate lovers!
Here is the recipe to make 6 mini bundt cakes. Double the recipe if you are making a full size cake.
Ingredients: Mini Chocolate Bundt Cakes
1/2 cup + 1 tablespoon of all-purpose flour
1 cup of sugar
6 Tablespoons of unsweetened cocoa powder
1 teaspoon baking soda
1/2 baking powder
1/2 teaspoon salt
6 Tablespoons of sour cream
1/4 cup of vegetable oil
1 large egg
1/2 teaspoon vanilla extract
1/2 cup of freshly brewed hot coffee

Chocolate Ganache
1/2 can of sweetened condensed milk
1/2 cup semi-sweet chocolate chips
Optional: sprinkles, berries, or whipped cream

Directions:
1. Preheat oven to 350 Degrees. Spray pan. I recommend Baker's Joy or spray and dust with cocoa powder.
2. Using a mixer, mix together flour, sugar, cocoa, baking soda, baking powder, and salt.
3. In another bowl, whisk together the sour cream, oil, egg, and vanilla. Slowly add the wet ingredients to the dry. Then slowly add the coffee to the batter while mixing on low.
4. Pour the batter into the prepared pan about 3/4th full and bake for 22 to 26 minutes.
For the Chocolate Ganache
1. Add sweetened condensed milk and chocolate chips to a microwaveable bowl and microwave on high for one minute. Stir until mixed and melted. Heat for 15 more secs. as needed.

Cool cakes in the pan for 10 minutes then release on a cooling rack. Add ganache and decorations.
