分享一个可以把一变成三种口味的绿豆馅做法。前大半段的制作方法其实是一样的,我只是在把馅炒到开始成团时,才分别加入抹茶和咖啡液体,让原本只是原味的绿豆馅多一点变化,口味多一些,吃起来也没有那么单调。

这个绿豆馅多用途,可以用在面包,红龟糕,冰皮月饼,包子等。传统月饼或蛋黄酥等的内馅要更干一些,不然成品会爆浆或变得软榻。但是有时馅炒久会出油,所以我会比较建议把馅炒到成团时,才加入适量的澄面粉或中筋面粉,再把馅调到软硬适中。

材料:
1)去皮绿豆 – 150g
2)水 – 500ml
3)白糖 – 100g
4)食用油 – 50ml
5)盐 – 1/4 tsp
6)中筋面粉/澄面粉 – 2 tbsp
7)抹茶粉和咖啡粉 – 适量

*也可以加水把去皮绿豆用蒸或煮的方式煮到熟软。用料理机打成泥时,如果太干就适量加水。稀点的绿豆泥更容易打到细腻,不需要费力就可以全部过筛(如视频)。但翻炒的时间会比较长。
*炒好的绿豆馅要用保鲜膜贴着表面盖好防止表皮变干。待完全冷却后才用保鲜膜包好,再放入密封盒子冷藏保存。
*成品总共500g++。
*可以一次性炒多一点的绿豆馅。炒到开始成团时,才把馅分成三份,再分别加入抹茶和咖啡,做成原味,抹茶和咖啡绿豆馅。放置一旁待炒的绿豆馅需要盖紧防止表皮变干。
*如果需要比较干身的馅,像是用在传统月饼或蛋黄酥,可以在成团时再加入澄面粉或中筋面粉,每次加 1tsp,先拌均,觉得太软再加1 tsp,直到软硬适中后,才开小火翻炒片刻即可。

Ingredients:
1)Mung Bean – 150g
2)Water – 500ml
3)Sugar – 100g
4)Cooking Oil – 50ml
5)Salt – 1/4 tsp
6)All purpose Flour/ Wheat Starch – 2 tbsp
7)Matcha powder and Coffee powder

*You can also add some water to mung bean, and steam or cook on stove until the beans can be easily mashed. Add water if the bean is too dry to puree.
*Cover the mung bean paste with plastic wrap to prevent the skin from forming, Let it cools to room temperature, wrap with plastic wrap before put in air tight container and keep in the refrigerator.
*Final weight is 500g++.
*You can cook more mung bean paste at once. When it starts to form dough, divide the paste into 3 portions and make them into different flavor accordingly. Cover the paste when they are not in use too to prevent the skin from forming.
*If you want drier paste for traditional mooncakes or flaky mooncakes, add 1 tsp of wheat starch/all purpose flour at a time to mung bean paste, mix well until you get the desired consistency. Then only you turn to medium low heat and cook the paste for another 1 – 2 mins.
