Ingredients
Nylon sev /noodle type crispy snack- 2 tablespoon
Fresh coconut - 2 tablespoon grated
Garlic - 5 to 6 cloves finely chopped (optional)
Green chili - 1 teaspoon finely chopped
Ginger - 1 teaspoon finely chopped
Salt - as required
Garam masala - 3 teaspoon
Sesame seeds - 1 teaspoon
Kasuri methi - 2 teaspoon
Sugar - 1/2 teaspoon
Potato - 3 small-sized, make cross-shaped vertical slits in it, 3/4 way down.
Brinjal - 2 small-sized, make cross-shaped vertical slits in it, 3/4 way down.
Onion - 1 small-sized, slits in it, 3/4 way down.
Oil - 2 tablespoon
Mustard seeds - 1/2 teaspoon
Cumin seeds - 1/2 teaspoon
Sesame seeds - 1/2 teaspoon
Hing/asafoetida - a pinch
Tomato - 1 big-sized finely chopped
Water - as required
Turmeric powder - 1/4 teaspoon
Red chili powder - as required
Coriander powder - 1/2 teaspoon
Coriander leaves - 1/2 teaspoon finely chopped
Instructions
Take a bowl and add nylon sev, coconut, garlic, green chili, ginger, salt, garam masala, sesame seeds, sugar, and kasuri methi. Mix it well.
Now, stuffing is ready.
Take the potato and peel it. Make cross-shaped vertical slits in it, 3/4 way down and fill the stuffing in it.
Take brinjal and make cross-shaped vertical slits in it, 3/4 way down and fill the stuffing in it.
Take an onion and peel it. Make a slit in it, 3/4 way down.
Heat oil in a pressure cooker.
Add mustard seeds, sesame seeds, cumin seeds, ginger, garlic, green chili, asafoetida, and kasuri methi. Saute it well.
Add tomato and add stuffing in the pressure cooker.
Add stuffed potato, brinjal, and onion in it.
Add water, as required for the thick consistency.
Add turmeric powder, red chili powder, coriander powder, garam masala, sugar, and salt. Saute and cover the lid until a whistle. Keep the flame medium.
Now, turn off the flame and wait until the steam releases from the pressure cooker.
Transfer it to a serving bowl and garnish it with coriander leaves.

If you don’t have fresh coconut then you can also use dry grated coconut.
You can store stuffing in an airtight container in the refrigerator for 3 to 4 days.
