Corned Beef Chopsuey Recipe (Pisupo) and Potato Salad

Ingredients
• 1-2 cans of corn beef
• 1 large onion chopped
• 4-5 cloves of garlic minced
• 3-4 cups chicken stock
• Minced fresh ginger/dry ginger powder(optional)
• Dark Soy Sauce
• 1-2 Packet glass vermicelli noodles
• Mix vegetables
• Salt and pepper to taste

Potato Salad
• 6 large potatoes boiled with skin
• 4-5 boiled eggs
• 1 small onion finely chopped
• 1-2 stalks spring onion chopped
• Kewpie Mayonnaise
• Salt and pepper to taste

Homemade Chicken Stock/Broth Recipe

Ingredients
• chicken bones
• 1-2 large onions
• 2 bay leaves
• 3-4 stalks spring onions
• 1 tbs black peppercorns
• 4 thick slices of fresh ginger
• 3 garlic cloves
• 2-3 litres of water
• 2 cubes of chicken stock/powder

Steps
1. Wash chicken bones well
2. Add all the ingredients in a large stock pot
3. Boil and simmer for one to two hours
4. Drain stock and use for cooking
5. Cool leftover stock completely and store in the freezer for up to a month for other recipes.
6. When ready to use thaw the stock and use again
