The recipe makes 6 (180g) mooncakes

Ingredients for 6 mooncakes:
580g Lotus seed paste
12 Salted egg yolk
170g All purpose flour
117g Inverted syrup
35g peanut oil
4.5g Lye water
Egg wash
1 egg yolk
1 tbsp water

Ingredients for 12 mooncakes:
1160g Lotus seed paste
24 Salted egg yolk
340g All purpose flour
234g Inverted syrup
70g peanut oil
9 g Lye water

Egg wash
1 egg yolk
1 tbsp water

Ingredients for 24 mooncakes:
2320 Lotus seed paste
48 Salted egg yolk
680 All purpose flour
468 Inverted syrup
140peanut oil
18 Lye water

Egg wash
1 egg yolk
1 tbsp water

EQUIPMENT
To make traditional baked mooncakes, you’d need the following equipment:

A mooncake mold for making 150g to 180g ones
A kitchen scale to measure the dough and filling for each cake
A pastry brush for coating the cakes with the egg wash
A baking sheet

做传统月饼我们需要用到的厨具如下:

1.)150克 至180g 之间的月饼模具 。
2.)秤,用来秤饼皮和馅料
3.)毛刷,用来涂蛋液和涂面粉
4.)烘焙纸
