VEGETABLE BARLEY SOUP

•1 Tbsp salt •1 onion, diced
•2 stalks celery, diced •2-3 cloves, garlic
•2 tsp salt

•5-6 cups chopped vegetables
(potatoes, carrots, green beans, ect..)
•1/2 cup pot barley
•1 container chicken broth (4 cups)
•1 large can diced tomatoes
•1 cup water

•1 tsp Italian seasoning •1 can tomato paste
•salt & pepper to taste •2 tbsp br. sugar
•1-2 tbsp red wine vinegar

~ Sauté onion and celery in 1 tbsp olive oil. Add salt and minced garlic. Sauté for 2-3 minutes.

Add to slow cooker - onion mixture and all other ingredients except: salt & pepper (to taste) + tomato paste. Mix well. Cover.

Cook on high for 5-6 hours, or low for 10-12 hours. 1-2 hours before eating, add tomato paste and adjust seasonings.

6-8 servings.


MOM’S SPAGHETTI SAUCE

• 1 pkg ground beef •1 onion, diced
•2 stalks celery, diced
•2-3 garlic cloves, minced
•6-8 mushrooms, sliced
•1-2 green peppers, diced

•2 jars pasta sauce •1 tsp salt
•2 cans diced tomatoes •1 tsp garlic powder
•1/2 tsp onion powder • 1 tbsp oregano
•1 tsp Italian seasoning •2 bay leaves
•1 tbsp brown sugar / honey
•1 can tomato paste

~ In a pan fry up ground beef. Remove excess fat. Add onion, celery, garlic, mushrooms, green pepper. Cook until veggies soften.

Add to slow cooker - ground beef mixture, pasta sauce, diced tomatoes and all other ingredients except tomato paste.

Cook on high 5-6 hours or low 10-12 hours.
Check an hour before done. Add tomato paste and adjust seasonings.

Serve over spaghetti noodles. Garnish with Parmesan cheese. Serves 6-8.

HOMESTYLE CHILLI

•1 cup dried kidney beans
•2-3 cups dried pinto beans

~Soak beans overnight and cook until tender - OR use 2 cans pork & beans + 1 can kidney beans.

•1 pkg ground beef •1 onion, diced
•2 garlic cloves, minced
•1-2 green peppers, diced
•cooked beans ~ reserving cooking liquid
•1-2 large cans diced tomatoes

•1/2 cup brown sugar •1/3 cup ketchup
•1/2 cup apple cider vinegar
•1 tbsp salt •1 tsp garlic powder
•1 tsp minced onion •1 tsp onion powder
•2 tbsp chili powder •1 tsp paprika
•1 tsp cumin powder •1 tsp oregano

~ Cook ground beef in a large frying pan until brown, breaking up into smaller pieces. Add onion nd garlic. Sauté until translucent.

In slow cooker add beef mixture and all other ingredients. Mix thoroughly, adding some reserved bean liquid, if needed. Cook on high for 5-6 hours or low for 10-12 hours. Check an hour before done to adjust seasoning.

Serves 6-8.
